Hungry Weekend!!!

My boredom-hunger was being a little A-HOLE yesterday.  That's what I get for testing out new recipes on Saturday and then staying home all day Sunday to sample them every 20 minutes.  UGH.



At least they were fairly healthy recipes though, so it's not like I was eating total crap all day.  I had a pal over on Saturday and she helped me test out some recipes that I'd been working on...ground turkey (or chicken) egg rolls and spicy black bean burgers.  They both came out really great!  For some reason I didn't take any pics.  

I made a spicy spread for the black bean burgers out of light mayo, plain greek yogurt, hot sauce, cumin, garlic & cayenne pepper.  It went great on the burgers (which we put in lettuce wraps) but I wasn't thinking and left it sitting out on the counter while we ate.  BF walked into the kitchen at one point and caught one of our cats just lapping away at it.  He yelled and chased him away, and I think Buzz didn't realize (or maybe he just didn't care) how spicy it was, because he started coughing, then continued to lick his lips for the next half hour.  I felt sorta bad for him, but it was hilarious.  Plus--serves him right!



Last night for dinner I made these delicious chicken taco cups in a muffin tin.  Seasoned chicken, salsa, black beans and corn in a crisped-up wonton wrapper with melty reduced-fat cheddar...SO GOOD!  

But yeah, as you can see, my weekend revolved around food quite a bit.  I definitely need to make some plans for this coming weekend so I won't be as tempted.  

Shout-out to Cheri, who should be leaving the hospital soon if she hasn't already.  Welcome to Band-Land, Cheri!!!!!!

  1. OK I do have to say the burgers sound so AWESOME!! And the cat story litterally made me LOL!! This week will be better. It takes a lot for me to not eat a ton on the weekends too!

  2. Looking at yummy recipes makes me think I am hungry, even if I just finished eating. I don't usually go in search of recipes, but people are forever posting/linking them to fb...and of course I can't resist clicking on them :)

    1. UGH, I'm the same way. When I look at recipes I get all excited about making all of them. Not a good thing when you decide to make all of them in the same day...

  4. I had to skim read that blog because it was making me hunnnnngggrrrry! Thanks for the shout out though. :-) It is going to be a long 8 more days on liquids, I don't know how Rachel survived her bajillion weeks!

    Oh yeah...this should be about you, not me. ;-D lol How about if you freeze a bunch after you make it, whatever it was I skimmed and couldn't bear to read? Would that help? I got a bunch of freezer to microwave glass containers...or things could defrost - in like 4 and 6 oz sizes with lids. Maybe that wouldn't work for what you made..okay, tummy growling, lol...LEAVING! ;-D

    1. Buzz is always very interested in what I'm eating. Particularly when I'm drinking milk. He will climb all over me and try to pull the rim of the glass down with his paw, and seriously he won't shut up. He's yowling the entire time...he weighs like 6 lbs but he's got some serious lung power
